Smoky Refried Beans Soup


Ingredients

    2 large onion, chopped
    4 cloves garlic, minced
    3 cups vegetable broth
    (2) 14-ounce can diced tomatoes (fire-roasted)
    (2) 15 ounces fatfree refried beans
    (2) 15 ounces black beans, cooked
    2 cups frozen corn kernels
    1/2 cup Western Style Vegetables
    2 teaspoon cumin
    3 teaspoon smoked paprika
    1 teaspoon chipotle chili powder
    2 teaspoon hot sauce
    1 teaspoon Mexican oregano
       salt and pepper, to taste



Directions

Spray a large, non-stick pot with cooking spray, and sauté the onion until it begins to brown. Add the garlic and cook for one more minute. Add all the remaining ingredients and cook until the flavors blend, 20-30 minutes.


Serving suggestion: Garnish with fresh tomato salsa and serve with baked tortilla chips and a large salad.

Vegan Vanilla Ice cream



Ingredients:


3 cups Cashew Cream or Soy Cream
2 vanilla beans
¾ cup + 2 Tablespoons sugar
2 Tablespoons arrowroot flour or tapioca flour
½ teaspoon turmeric powder
1 pinch salt
1)Prepare your Cashew Cream or Soy Cream.

2)Straighten out your vanilla beans and cut each one in half by running 
the tip of a sharp knife along each one lengthwise. Open each vanilla 
bean half with your hands so the vanilla bean paste is exposed. Now 
scrape out the vanilla paste by running your knife blade perpendicular
down the open half of the vanilla bean. Set the vanilla bean paste
aside and discard the outer halves.

3)In a medium saucepan over medium heat, add the Cashew Cream or
 Soy Cream, sugar, arrowroot flour or tapioca flour, turmeric, vanilla 
bean paste and salt. Bring the mixture to a simmer then remove from 
heat while whisking constantly. Whisk the mixture for an additional
 5 minutes to make sure the sugar is completely dissolved. Transfer 
to a covered container and place in the refrigerator to cool for about
 two hours.

4)Now we need to whip some air into the ice cream so it's creamy. Beat
 the mixture with a mixer for about 5 minutes.

5)Mix in an ice cream maker for about 30 minutes.

6)Transfer to a covered container and put it in the freezer for 3 hours.

Ingredients:

1 package dry yeast (about 2 1/4 teaspoons)

1 cup warm water
3 to 4 tablespoons agave or maple syrup
3 tablespoons vegan butter, melted and cooled
1 teaspoon salt
Egg replacer for 1 egg*
2 cups unbleached bread flour
1 cup whole wheat flour

* I use ener-g egg replacer. You could also use 1 tablespoon flax mixed with 3 tablespoons water.

Method to Cook:
  • Dissolve yeast in 1 cup warm water in a large bowl; stir in agave. Let stand for 5 to 10 minutes.
  • Add melted vegan butter, 1 teaspoon salt, and egg replacer; stir well with a whisk.
  • Lightly sift flour with a fork to break up any lumps. Add 2 3/4 cups flour to yeast mixture, and stir until a soft dough forms. Cover and let stand for 15 minutes.
  • Turn dough out onto a lightly floured surface. Knead until smooth and elastic, about 8 minutes. Add remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands. Dough will be very soft.
  • Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85°), free from drafts, 40 minutes or until doubled in size. To check if dough is ready, gently press two fingers into dough. If indentation remains, the dough has risen enough.
  • Punch dough down. Shape dough into a ball; return to bowl. Cover and let rise an additional 40 minutes or until doubled in size. Punch dough down; cover and let rest 15 minutes.
  • Divide dough into 3 equal portions. Working with 1 portion at a time, on a lightly floured surface, roll each portion into a 25" rope with slightly tapered ends. Place ropes lengthwise on a large baking sheet, pinch ends together to seal. Braid ropes; pinch loose ends to seal. Cover and let rise 25 minutes or until almost doubled in size.

Cool reheat oven to 375 degrees Fahrenheit. Bake for 30 minutes or until bread sounds hollow until when lightly tapped, let cool for 20 minutes and then dig in!

Chocolate and Banana Ice-Cream


Ingredients
 340g/12oz (1 pack) soft tofu
2 ripe bananas
100g (4 oz) plain chocolate (Belgian is good, or Green&Blacks)
Instructions

1) Melt Chocolate in a bowl over a pan of simmering water

2) Meanwhile put tofu and peeled bananas in blender until smooth
3) Add melted chocolate and blend again
4) Pour into ice-cream maker and freeze to perfection!
